Legumes, for example, fix nitrogen in the soil, making them beneficial for crop rotation. Vegetables are typically categorized botanically, nutritionally, or culinarily. In culinary terms, they are often grouped based on how they’re used in dishes. Stir-fry vegetables might include bell peppers and mushrooms, while salad vegetables lean heavily on lettuce, cucumbers, and tomatoes (the latter botanically a fruit).
