Legumes, for example, fix nitrogen in the soil, making them beneficial for crop rotation. Vegetables are typically categorized botanically, nutritionally, or culinarily. In culinary terms, they are often grouped based on how they’re used in dishes. Preservation methods include canning, freezing, pickling, and dehydration. Nutritional value can degrade over time, especially in leafy greens, making freshness a priority in supply chains.
