Bulbs such as onions, garlic, and shallots are used primarily for flavor rather than nutrition, though they do have health benefits, including antimicrobial and anti-inflammatory properties. These are staples in most global cuisines.
Seed vegetables include peas, beans, and corn. These tend to be higher in protein than other vegetables and have both culinary and agricultural importance. Legumes, for example, fix nitrogen in the soil, making them beneficial for crop rotation. Vegetables are typically categorized botanically, nutritionally, or culinarily. In culinary terms, they are often grouped based on how they’re used in dishes. Stir-fry vegetables might include bell peppers and mushrooms, while salad vegetables lean heavily on lettuce, cucumbers, and tomatoes (the latter botanically a fruit).
Agricultural production of vegetables varies greatly depending on climate, soil conditions, and technology. The top vegetable-producing countries include China, India, and the United States. Urban farming and hydroponics are modern trends in vegetable cultivation, addressing food security and reducing transportation costs.Vegetables are susceptible to spoilage and pest damage, requiring proper post-harvest handling and storage. Preservation methods include canning, freezing, pickling, and dehydration. Nutritional value can degrade over time, especially in leafy greens, making freshness a priority in supply chains.
